Zucchini and Squash Pasta


 3 large Yellow squash, made into noodles using a spiralizer

3 large Zucchini, made into noodles using a spiralizer

1 large Red or yellow onion, thickly sliced

3 or 4 cloves Garlic (depending on how much you like garlic), peeled and minced

3 tablespoons Olive oil or other

½ teaspoon Italian seasoning

¼ teaspoon Salt

¼ teaspoon Coarse ground black pepper


 Heat two tablespoons of oil in a large saucepan on low. Once heated, add in the onions, salt and pepper. Cook on low, stirring occasionally for about 30 to 40 minutes until the onions have caramelized. Make sure that the onion is sliced thickly or it will burn.

After the onions have caramelized, add in the remaining tablespoon of oil, garlic, zucchini and squash noodles, and the Italian seasoning. Cook on low for about three minutes or until the noodles have softened.

Serve hot with a meat dish. Store leftovers in a sealable container in the fridge.
