1 Quinoa patty
1 Cage-free egg
A pinch Salt
A dash Coarse ground black pepper
1 tablespoon Scallions (green onion), chopped
2 teaspoons Oil of your choice (olive, coconut, sesame, etc.)
Place the quinoa cake on a plate.
Heat the oil in a frying pan on medium low. Cook the egg over easy or sunny side up, being careful not to break the yolk.
Once the egg is done cooking, serve it on top of the rice cake with a spatula and sprinkle the salt, pepper, and scallions on top. Eat like an open-faced sandwich.
