No-bake Granola Bars

1 cup Dates, pitted (make sure that they are moist and sticky)

¼ cup Raw honey or agave syrup

¼ teaspoon Pure vanilla extract

½ cup Dried fruit (raisins, cranberries, apples, etc.)

1 cup Raw pecans, chopped

½ cup Sesame or pumpkin seeds

1 cup Raw almonds

¼ cup Natural peanut butter or almond butter

2 teaspoons Organic coconut oil

¼ cup Unsweetened, shredded coconut




Chop dates thoroughly into tiny pieces or use a food processor if you have one for about one minute

Toss the almonds, dates, pecans, seeds, dried fruit and shredded coconut in a medium-sized bowl until mixed well

Heat in a small pan the honey and peanut butter together on the lowest setting until melted and warm. Stir well and pour over the dry ingredients that you mixed together in the bowl. Mix this gooey goodness in as well until dispersed evenly, making sure that the sticky dates are dispersed well also.

Line an 8” x 8” baking dish or small, high-walled pan with wax paper so the mixture does not stick, then scrape the mixture from the bowl with a rubber spatula into the lined baking dish.

Press down firmly on the mixture until it is spread evenly. The firmer the better, for that will help the bars stick together better. Try using a large metal spatula with the pressure of your palm over it.

Cover the dish with another layer of wax paper or plastic wrap and put them in the fridge or freezer for up to 20 minutes to solidify.

Remove the bars from the pan and chop them into bars (10 is a good fit). Store in an airtight container and put in the fridge or freezer to keep fresh. Pull them out at any time for a quick snack or tasty dessert. You can also wrap them up and bring them with you on the go, as you will see in the next chapter.
