Avocado Chocolate Mousse
2 tablespoons cacao powder (not to be confused with cocoa powder!)
1 ripe avocado, peeled and pitted
¼ cup and 2 teaspoons Raw honey or your choice of sweetener
2 cups unsweetened coconut milk
Add the coconut milk, honey and cacao powder together in a blender or food processor and mix on high.
Cut the avocado into chunks to facilitate the blending process, then throw it into the blender as well and mix until you have a silky consistency.
Pour into a small bowl, cup or storage container. Serve immediately or refrigerate to thicken further.
